Ice cream month

In celebration of Ice cream month and seeing that it is one of my teenage daughter's favorite treats.
We decided to make our own ice cream.......first time ever.......
To be honest......she did it mostly on her own.......dad had to help with whipping up the cream and I had to double check the instructions on the recipe, but she did the rest.
She had so much fun doing it and I'm so proud of her, for giving it a try.

Here is the recipe, just for you if you feel like giving it a try:

"My moms strawberry ice cream" - "Boerekos" magazine, Issue 3, page 80

Ingredients
500g fresh strawberries, cleaned and chopped chunky
80ml castor sugar
Juice of half a lemon
5ml Vanilla essence
500ml Thick cream

Method
Put the strawberries, castor sugar, lemon juice and vanilla essence in a food processor and mix till smooth.
Stir the cream till it is thick and makes soft points.
Fold in the strawberry mix to the cream.
Pour into a metal or plastic holder and freeze the ice cream , but it must still be soft.
Remove from the holder and mix again thoroughly and put back into the holder.
Put on the lid and freeze overnight.
Take out of the fridge a while before your meal, so it gets time to soften. Enjoy.
Makes 1.5lt of ice cream.
To me it tastes a lot like frozen yogurt, more than sweet creamy ice cream, but it is very yummy!
